Growing and Using Fresh Rosemary

Rosemary is one of those essential herbs for so many dishes and it’s easy to grow. The evergreen leaves are so fragrant. Rosemary is a member of the mint family along with many other herbs, such as oregano, thyme, basil and lavender.

How to Grow:

  • The herb to all but ignore and have success.
  • Water only when soil has dried. Place in as much sun as you can offer.
  • Fertilize monthly.

Harvest:

  • The tender tips and foliage can be cut as needed throughout the growing season.
  • Occasionally, longer, woody stems can be harvested and used as skewers for kabobs.
  • Leaves may also be dried and stored for later use.
  • Pruning the plants will encourage a tight compact habit.
  • Plants can also be sheared or pruned into forms resembling small evergreens.

How to Enjoy:

Roasted Potatoes:

In a bowl combine

  • 1 ¾ lbs quartered small red potatoes
  • 1 small quartered onion
  • 2 minced garlic cloves
  • 1/4 tsp garlic salt
  • 1/4 cup olive oil
  • 1 Tbsp fresh rosemary, chopped.

Toss to coat. Bake uncovered at 425° for approximately 30 minutes.

Rosemary Garlic Chicken:

Using a rolling pin

  • Pound 4 chicken breasts to similar thickness between wax paper sheets.
  • Heat 1 Tbsp olive oil in a large skillet over med-high heat.
  • Add 2 halved garlic cloves and cook until brown.
  • Add chicken and cook until brown on both sides. 3-5 minutes/side.
  • Add 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup vinegar (cider/sherry/rice).
  • Add 1 tsp chicken broth
  • 1 Tbsp finely chopped rosemary.

Cover, reduce heat to low cooking until done (3-5) minutes. Remove chicken, reduce sauce until syrupy, pour over chicken and serve.

Sparkling Limeade:

Stir

  • 1 cup lime juice with
  • 3/4 cup sugar in a small saucepan over medium heat.
  • When simmering, reduce heat to low until sugar is dissolved.
  • Add zest of two limes and 4 rosemary sprigs.
  • Simmer 1 more minute then cool and chill overnight.
  • Strain and mix with 4-6 cups chilled sparkling water.

Serve over ice w/bruised rosemary sprig for garnish.
